Savory spice gives these speedy cookies a kick

The tasters I managed to catch had these reactions: "Love the texture and coconut -- the taste kick at the end is amazing"; "Delightful cocoa flavor with a peppery kick"; "Tasty, though I'm not a big coconut fan"; "Nice and moist -- reminiscent of a Mounds bar but not as sweet (and that's good)"; "Crunchy -- milder than I expected" (this last from someone who eats a lot of spicy food).


Dec. 23--Running out of time to do everything? Me, too. So the fourth and last recipe chosen for our Cookie Corner, Mexican spiced macaroons, is a fast treat that still has enough oomph to impress your co-workers or drop-in guests.

Our newsroom potluck last week was right in the middle of several features deadlines, as well as my annual gingerbread-for-the-relatives baking session, so I had the ideal opportunity to test this recipe.

It truly was fast -- just about an hour to mix and bake the whole batch, once the ingredients were on the counter. And it seems to have succeeded on the taste level: I didn't have any leftovers to take home.

TESTING AND TASTING

-- Who wants to be separating eggs when you're in a hurry? Plus, I didn't want to worry about finding uses for four egg yolks. So instead of the four egg whites originally called for in the recipe, I substituted not quite a cup of All Whites liquid egg whites (about half of the 16-ounce carton, which I found with the egg products at the supermarket). The dough was probably a little more liquidy than it would have been, but the cookies baked up just fine.

-- The cayenne pepper really adds the character to these cookies; it kicks in about the second bite. You could leave it out and still have a nice cinnamon-y chocolate macaroon.

-- This is another recipe that really needs parchment paper to succeed. The cookies came off it beautifully.

-- You won't need all the cinnamon sugar called for here, but you can save the rest in a jar for cinnamon toast or another use.
