"Silken Creations has all the sweet, creamy taste and texture of traditional pie-making ingredients like milk, cream and butter, but without any of the lactose. It's completely lactose free," said Maribeth Abrams, chef, nutrition educator and cookbook author. "So if you're lactose intolerant, now it can be a piece of cake to eat pie!"

People with lactose intolerance are unable to digest lactose, the primary sugar in milk and other dairy products. In the U.S., it affects 75 percent of the African-American, Jewish, Native American and Mexican-American populations and 90 percent of Asian-Americans. It's caused by a shortage of lactase, an enzyme that breaks down milk sugars so they can be absorbed into the bloodstream. When lactose intolerant people eat dairy products they have distressing, but not life-threatening, symptoms.

"Desserts can be a real challenge to people who are lactose intolerant," explained Abrams. "Their choices are limited to options like angel food cake, sorbet and gelatin. New lactose-free products have come on the market, but they are expensive, hard to find, and made out of ingredients that aren't natural."
